Air Fryer Zucchini Fritters with Tzatziki Sauce

Ingredients

Fritters: 

  • 3 medium (about 1 pound) zucchini, shredded 
  • 1 tablespoon salt 
  • 1 large carrot, peeled and shredded 
  • 2 large eggs, lightly beaten 
  • 3/4 cup all-purpose flour + 2 tablespoons, if needed 
  • 3 tablespoons chopped fresh dill 
  • 3 tablespoons chopped Italian parsley 
  • 2 tablespoons chopped fresh mint   
  • 1/4 teaspoon baking powder 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon ground black pepper  
  • 1/2 cup crumbled feta cheese 
  • 1 tablespoon olive oil

 

Tzatziki Sauce: 

  • 1 (10-inch) English cucumber, shredded  
  • 1 cup full-fat Greek yogurt  
  • 1 tablespoon chopped fresh dill 
  • 1 tablespoon lemon juice 
  • 1 teaspoon lemon zest 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon coarse black pepper

Directions

For Fritters: 

  1. Line a 13- by 18-inch sheet pan with parchment paper. Set aside. 
  2. In a large bowl, combine zucchini and salt. Place in a strainer over another large bowl and let stand 15 minutes. 
  3. Press zucchini with a spatula against sides of strainer to remove excess liquid. Place zucchini in a clean dishtowel or paper towels, and squeeze to remove remaining liquid.  
  4. In a large bowl, combine zucchini, carrot, eggs, ¾ cup flour, dill, parsley, mint, baking powder, salt, and black pepper. Mix well. Gently fold in feta cheese. If mixture is very wet and loose, add remaining 2 tablespoons of flour. 
  5. Scoop mixture using a small scoop (about 2 tablespoons) onto prepared pan. Flatten to a 3-inch circle. Lightly brush tops with olive oil. Refrigerate for 15 minutes. 
  6. Set air fryer on 375°F. Place fritters in a single layer, oiled side down, in air fryer basket leaving a space between each fritter. Refrigerate remaining fritters until ready to cook. 
  7. Lightly brush tops with olive oil. Cook for 13 to 15 minutes. Repeat with remaining fritters. 
  8. Serve with Tzatziki Sauce. 

For Tzatziki Sauce: 

  1. Place shredded cucumber in a strainer over a bowl. Press with a spatula to remove excess liquid.  
  2. In a medium bowl, combine all ingredients. Refrigerate until ready to use.
