Pineapple Barbeque Pulled Pork

Ingredients

  • 2 pounds pork shoulder (boneless and skinless cut into 2-inch pieces) 
  • 2 teaspoon salt 
  • 1 tablespoon minced garlic 
  • 1 teaspoon paprika 
  • 1 teaspoon liquid smoke (optional) 
  • 1/2 cup pineapple chunks  
  • 1/2 cup pineapple juice 
  • 2/3 cup BBQ sauce of choice 

Coleslaw topping: 

  • 2 cups Broccoli slaw 
  • 1/2 cup Mayo 
  • 1 teaspoon pepper 
  • 1 teaspoon salt 
  • 1 tablespoon pineapple juice 
  • Hawaiian rolls for serving 

Directions

  1. Cut up pork into 2-inch pieces 
  2. Add pork, spices, pineapples, pineapple juice, and ½ cup BBQ sauce to pressure cooker 
  3. Be careful not to fill your pressure cooker too high because it will leak when released if filled with liquid. As the meat cooks it produces extra juices 
  4. Lock lid into place and pressure cook on high for 35 minutes 
  5. When cooking ends, allow a natural release. 
  6. Shred pork. Drain juices and add pork to a separate bowl 
  7. Cover with remaining BBQ sauce 
  8. Mix coleslaw mixture in separate bowl 
  9. Create sandwiches with Hawaiian rolls, pork, and coleslaw and enjoy!
