Easy Skillet Lasagna

  • 2 large eggs
    2 containers (15 ounces each) ricotta cheese
    1/2 cup grated Parmesan cheese
    1 tablespoon Italian seasoning
    1/2 teaspoon coarse pepper
  • 1 pound ground sausage
1 pound ground beef
1 large onion, chopped
3 cloves garlic, minced
2 jars (24 ounces each) marinara sauce
4 cups shredded mozzarella
24 no-boil lasagna noodles


  1. Heat the electric skillet to 350°F.
  2. In a large bowl, beat eggs until yellow in color, about 1 minute. Stir in riccota, Parmesan and Italian seasoning until well blended. Set aside.
  3. In the preheated skillet, add sausage and beef. Stirring until sausage and beef are cooked through, about 7 minutes. Remove mixture to a bowl.
  4. Add onion and garlic to skillet. Cook until tender, about 3 minutes. Return meat mixture to skillet and add marinara sauce. Bring to a boil. 
  5. Remove 4 cups of sauce mixture to a bowl. Reduce temperature to 300°F.
  6. Layer 6 noodles across bottom of skillet, overlapping or breaking to fit. Spread 1 cup of the sauce over noodles. Spread 1 cup of the ricotta mixture over sauce and sprinkle with 1 cup mozzarella. Repeat layers 2 more times. Top with remaining noodles, sauce and mozzarella cheese.
  7. Cover and cook 45 minutes or until heated through and cheese is melted.
