Air Fryer Butternut Squash Fries
Ingredients
- 1 medium butternut squash, about 2 to 2 1/2 pounds
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoons coarse black pepper
- 2 tablespoons chopped fresh parsley, for garnish
Directions
- Use a large sharp knife and cutting board. Cut off top of squash. Cut about 1/2-inch off bottom of squash to create a flat surface. Stand squash up and peel from top to bottom.
- Cut across just above where squash flairs out; then cut both pieces in half lengthwise.
- Scoop out seeds and stringy flesh from bottom sections of squash. Discard.
- To create fries, slice top half lengthwise into ¼-inch thick slices. Lay slices flat on cutting board and slice into 1/4-inch thick sticks. Repeat with bottom portions.
- In a large bowl, combine olive oil, smoked paprika, salt, garlic powder, onion powder, and black pepper. Add squash fries and gently toss to coat.
- Place in basket of air fryer in a single layer. Set air fryer to 400°F and cook for 20 to 25 minutes, tossing fries every 5 minutes. Repeat with remaining fries.
- Serve immediately garnished with parsley.
Serves: 4
Test Kitchen Tip:
- These fries will not get as crispy as potato fries.
