Ingredients

Roasted Garlic Aioli:

  • 1 head garlic
  • 1 teaspoon olive oil
  • 2/3 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • ½ teaspoon coarse black pepper

Crispy Onion Rings:

  • 1 large sweet onion
  • 1 cup all-purpose flour
  • 1 teaspoon garlic salt, divided
  • 1/2 teaspoon coarse black pepper, divided
  • 2 large eggs, beaten
  • ¼ cup milk
  • 1 cup Panko breadcrumbs
  • 1 cup grated Parmesan cheese

Directions

  1. Roasted Garlic Aioli:
Slice the top off a head of garlic, exposing each clove. Place the head of garlic in the center of air fryer pan. Drizzle olive oil over top. Air fry at 400°F for 10 to 15 minutes or until garlic is roasted and soft. Let cool slightly. Using a food chopper fitted with the chopping/mixing blade, chop 10 to 12 cloves of roasted garlic until finely chopped. Add mayonnaise, lemon juice, salt, and black pepper. Process until smooth. Cover and refrigerate until ready to serve.
  2. Onion rings:
Slice onion in ¼-inch thick slices and separate into rings. Place in ice water for 10 minutes.
  3. In a medium bowl or shallow dish, combine flour, 1/2 teaspoon garlic salt and ¼ teaspoon black pepper. In another medium bowl or shallow dish, whisk eggs and milk. In a third bowl or dish, combine breadcrumbs, Parmesan cheese, remaining 1/2 teaspoon garlic salt, and remaining 1/4 teaspoon black pepper. Divide each mixture in half and reserve second half for coating second or third batch of onion rings.
  4. Drain the onion rings, but do not pat dry. Dredge each ring in flour, dip in egg mixture and coat in breadcrumb mixture.
  5. Place breaded onion rings in a single layer in the air fryer pan. Turning halfway through cooking time, air fry at 400°F for 8 to 10 minutes. Repeat with remaining onion rings. Serve with Roasted Garlic Aioli.

Serves: 4

TEST KITCHEN TIPS:

  • Coating mixtures tend to get very wet during the coating process. Saving have of the ingredients for the second or third batch helps keep the ingredients dry which allows the onion rings to be coated thoroughly.
  • The onion rings need to be in a single layer in the air fryer pan. However, you can stand coated rings up alongside the perimeter of the air fryer pan and place smaller rings inside larger rings.
  • Roasting garlic mellows the flavor. If you prefer an even milder garlic flavor in the aioli, reduce the amount of garlic cloves.
