Butternut Squash Soup

Ingredients

  • Water
  • 1 green onion, green part only, sliced
  • 1 clove garlic, grated
  • ½ cup sliced cooked chicken
  • ¼ cup shredded carrot
  • ¼ cup chopped dried mushrooms
  • 2 tablespoons finely chopped red bell pepper
  • 1 tablespoon chicken bouillon base
  • 1 teaspoon sriracha sauce
  • 1 teaspoon soy sauce
  • ½ teaspoon grated fresh ginger
  • 1 handful rice sticks (vermicelli)
  • 2 medium-boiled eggs, halved

Directions

  1. Fill electric kettle with water and bring to a boil.
  2. In a medium bowl, add remaining ingredients ending with rice sticks on top.
  3. Pour 2 cups boiling water over all ingredients in bowl. Stir to combine. Let stand 5 minutes.
  4. Garnish each serving with half an egg.

Serves: 2-4

Test Kitchen Tip: Other ingredients can be substituted for the vegetables and protein in this recipe. Be sure they are finely chopped to be cooked by the boiling water.
