Butternut Squash Soup

  • 1 small (100 g) onion
  • 2 cloves (8.5 g) garlic
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon Italian Seasoning
  • 1 can (28 ounces) San Marzano whole tomatoes, undrained
  • 2 tablespoons tomato paste
  • ½ teaspoon salt
  • ¼ teaspoon granulated sugar
  • ¼ cup grated Parmesan cheese


  1. In bowl of a food processor fitted with the chopping blade, add onion and garlic. Process on medium-high until finely chopped.
  2. In a large saucepan on medium-high, heat butter and olive oil. Add onion, garlic, and Italian seasoning. Cook until onion and garlic are soft.
  3. Add onion mixture, tomatoes, tomato paste, salt, and sugar to food processor bowl. Process on medium-high until pureed.
  4. Pour mixture back into saucepan and simmer on low, stirring constantly to prevent splatters, for 5 to 10 minutes or until thick. Stir in Parmesan cheese.
  5. Spread thinly over pizza dough and bake following pizza directions.
