Chicken Shawarma

Ingredients
For Chicken Shawarma:
**You could also use about 4 tsp store-bought shawarma seasoning
- 2 pounds boneless skinless chicken thighs
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/2 onion, sliced thin
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground cardamom
- 1/4teaspoon ground cinnamon
- 1 teaspoon salt
- 1 teaspoon pepper
For Tzatziki:
- 1/2 cup plain whole milk Greek yogurt
- 1 tablespoon fresh chopped dill
- 1/2 large garlic clove, minced (or 1 small clove)
- 1/4 cup finely shredded cucumber (squeeze out excess liquid)
- 1/2 tablespoon lemon juice
- 1 teaspoon olive oil
- Salt to taste
To serve:
- Warm naan or pita (pita would be more traditional but i used naan!)
- Hummus
- Chopped cucumber
- Chopped roma tomato
- Thinly sliced red onion
- Chopped parsley
Directions
- Add all chicken shawarma ingredients to a large bowl or bag and combine. Let it marinate in the fridge for at least 1 hour.
- Prepare the tzatziki by combining all ingredients in a small bowl. Transfer marinated chicken to Pressure Cooker. Click the “pressure” button and adjust the time to 5 minutes. Once it’s done cooking, let it natural release.
- Shred the chicken with 2 forks. assemble starting with naan or pita, a layer of hummus, chicken, cucumber, tomato, red onion, tzatziki & parsley
