Grilled Steak and Shrimp Fajitas
Ingredients
Seasoning Mix:
- 1 tablespoon ancho chili powder
- 1 tablespoon ground cumin
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon smoked paprika
- ¼ teaspoon dried crushed red pepper
Marinade:
- 4 cloves garlic
- 2/3 cup olive oil
- ½ cup fresh lime juice
- 2 pounds sirloin steak, sliced thin
- 1 pound peeled medium raw shrimp
- 2 tablespoons olive oil
- 1 large red onion, cut in thin wedges
- 1 medium green bell pepper, cut in strips
- 1 medium yellow bell pepper, cut in strips
- Flour tortillas
Toppings: chopped cilantro, guacamole, salsa, sour cream
Directions
- Seasoning Mix: In a small bowl, combine all seasoning mix ingredients.
- Marinade: In a large bowl, whisk together garlic, olive oil, and lime juice. Add seasoning mix and whisk to blend.
- Pour half of mixture into another large bowl. Add steak to one bowl and shrimp to the other bowl. Cover and let marinade for 30 minutes to 1 hour.
- Heat grill to 400°F. Add oil to grill and heat until oil begins to shimmer. Add onion and peppers and cook until crisp-tender, 6 to 7 minutes. Remove to a plate. Drain steak and discard marinade. Add steak to grill. Cook until steak is barely pink in center, 5 to 8 minutes. Remove to a plate. Drain shrimp and discard marinade. Add shrimp to grill and cook until shrimp is opaque. Add steak and vegetables back to grill to warm if necessary.
- Serve in warm tortillas with desired toppings.
Serves: 6-8
TEST KITCHEN TIP:
Steak can be marinated longer than shrimp. Add shrimp to marinade about 30 minutes before you are ready to grill.
