Pineapple Barbeque Pulled Pork

Ingredients
- 2 pounds pork shoulder (boneless and skinless cut into 2-inch pieces)
- 2 teaspoon salt
- 1 tablespoon minced garlic
- 1 teaspoon paprika
- 1 teaspoon liquid smoke (optional)
- 1/2 cup pineapple chunks
- 1/2 cup pineapple juice
- 2/3 cup BBQ sauce of choice
Coleslaw topping:
- 2 cups Broccoli slaw
- 1/2 cup Mayo
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 tablespoon pineapple juice
- Hawaiian rolls for serving
Directions
- Cut up pork into 2-inch pieces
- Add pork, spices, pineapples, pineapple juice, and ½ cup BBQ sauce to pressure cooker
- Be careful not to fill your pressure cooker too high because it will leak when released if filled with liquid. As the meat cooks it produces extra juices
- Lock lid into place and pressure cook on high for 35 minutes
- When cooking ends, allow a natural release.
- Shred pork. Drain juices and add pork to a separate bowl
- Cover with remaining BBQ sauce
- Mix coleslaw mixture in separate bowl
- Create sandwiches with Hawaiian rolls, pork, and coleslaw and enjoy!
