Ingredients

  • 1 cup tomato sauce
  • 2 tablespoons packed brown sugar
  • 1/2 pound ground beef (85% lean)
  • ¼ cup finely chopped onion
  • ¼ cup Italian breadcrumbs
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coarse black pepper

Directions

  1. Heat toaster oven to 375°F. Spray baking pan with nonstick spray.
  2. In a small bowl, stir tomato sauce and brown sugar until brown sugar is dissolved. Set aside.
  3. In a large bowl, combine ground beef, onions, breadcrumbs, egg, Worcestershire sauce, salt, garlic powder, black pepper and 3 tablespoons tomato sauce mixture.
  4. Divide meat mixture in half and shape into 2 loaves. Place on toaster oven baking pan.
  5. Pour remaining tomato sauce mixture over loaves.
  6. Bake 26 to 30 minutes or until meatloaf reaches 165°F when tested with a meat thermometer.

Serves: 2

This recipe was developed for a 4 slice toaster oven. To make 4 servings in a 6 slice toaster oven, double all ingredients, except tomato sauce and brown sugar. Increase tomato sauce to 1 can (15 ounces) and brown sugar to 3 tablespoons. Follow recipe as directed.
